inspired by the barrage of restaurant advertisements for tacos, burritos & cerveza, and greeted by a display of fresh lime, ripe avocados and juicy tomatoes at whole foods, my roommate and i decided to make a fiesta feast of our own: fish tacos, with all the fixins’. my fingers are still stringent from the pepper!
i immediately dug out the londoner’s “epic fish taco” recipe, which i’d made once prior and LOVED. we adapted it a bit and made up some extra sides (because there were only 2 of us so we really needed all the food…).
our spread included:
- cilantro-lime marinated tilapia fillet
- chunky guacamole
- spicy tomato salsa
- chili yogurt sauce
- homemade wheat tortilla strips
- wild rice
- black beans
