i made this double batch for a pig roast party i was going to, and they went fast. can’t say they’re particularly healthy but hey – it’s a treat and when you’re baking for a crowd, i’ve certainly learned you can’t really skimp on fat or sweetness. (people notice!)

A TRULY LOADED COOKIE RECIPE yields ~4 dozen

//ingredients:

  • 1 cup butter, room temp
  • 1 2/3 cup organic cane sugar
  • 2 eggs
  • 2 tbsp almond milk
  • 2 tsp vanilla extract
  • 1 3/4 flour (half whole-wheat, half all-purpose)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 3/4 cup rolled oats
  • 1/3 cup chocolate chips
  • 1 cup shredded coconut
  • 1/3 cup walnuts

//directions:

  1. preheat oven to 325
  2. cream butter & sugar
  3. add eggs, almond milk, vanilla extract
  4. in a separate bowl, mix flour, baking soda, salt and cinnamon
  5. add dry mix to wet, and stir to combine
  6. gently mix in oats, chocolate chips, coconut and walnuts
  7. bake for 9-10 minutes, or until golden brown
  8. yields around 3-4 dozen, depending on how big you like ’em
