sometimes, i just don’t have much to say in these posts.

this breakfast is awesome, it’s super easy, and you should try it. that’s really all i got! oh that, and melted cheese is really one of the best things ever, but we all knew already knew that. fried egg + parmesan crisps breakfast // kitsch+cameraso instead of talking about this fried egg & parmesan crisp breakfast (which really speaks for itself), i’d rather talk about a new artist that i’m really into lately. aside from the new lord huron album (ahem, and sam smith), this gal’s all i’ve been listening to: låpsley. she’s 18 and sounds like she’s 30. her songs are simple and ethereal and unique. and on one of them (station) she does both the female and “male” vocals. badass.

FRIED EGG & PARMESAN CRISP BREAKFAST RECIPE {serves 1}

//ingredients:

  • 2 eggs
  • 1.5 oz shredded parmesan
  • 1 cup spinach
  • 1 tomato
  • 1/3 tbsp olive oil
  • 1/4 tsp oregano
  • fresh basil to garnish

//directions:

  1. slice tomatoes and chop basil.
  2. lightly coat the bottom of a medium skillet with olive oil. scoop pamesan cheese onto skillet (1/8 cup at a time). let cheese melt into a disc, 1 to 2 min. when bubbling, flip and cook 1 min more, until crispy. transfer crisps to a small plate.
  3. crack eggs in the skillet and cook until whites are opaque, 3 to 4 minutes. flip and cook on the second side, 1 minute. transfer to plate. (the yolk should still be runny.)
  4. add tomatoes to the skillet, sprinkle with oregano and a pinch of salt. cook 1 to 2 minutes, until warm.
  5. layer egg, tomatoes and parmesan crisps atop the spinach. top with fresh basil. enjoy!
