CANTALOUPE-BANANA SMOOTHIE BOWL RECIPE {serves 1}

a take on the acai bowl, using fresh cantaloupe for a light and refreshing summer breakfast!

//ingredients:

  • 10 oz cantaloupe (~1.5 cups)
  • 1 banana
  • 1/2 tbsp fresh mint
  • 1 tsp fresh ginger
  • to top: goji berries, almonds, almond butter

/directions:

  1. coarsely chop cantaloupe, banana and mint. peel ginger.
  2. combine all ingredients in a blender or food processor. add 1/4 cup water per person. blend until incorporated.
  3. transfer to a bowl. top with goji berries, sliced almonds or a dollop of almond butter!
