so for the platejoy recipes i develop, i develop the recipes (and often do my own photographing along with them). i then submit them to the platejoy team, who reviews, tests and approves them. they also do their own photographing. and my goodness, i’m envious.

for this recent recipe i created (baked eggs with pancetta and mushrooms), they sent me the above photo of my recipe. the photos i took are way below…hidden, because i’m ashamed of their poor quality in comparison to this gorgeous pic! i can blame the winter light, i can blame the camera, i can blame the lack of  fancy props. but really, i have to accept that i have a long way to go in terms of food photography! ugh. ASPIRATIONS.

it is crazy to see my creations come to life in a totally different way though! how do they get the food to look so vibrant, when my looks so drab? regardless, it all tastes delicious, i can promise you that. this recipe comes together in 20 minutes and is full of rich flavor thanks to the pancetta. enjoy!




  • 4 oz pancetta
  • 4 eggs
  • 1.5 cups mushrooms
  • 1/2 onion
  • 2 cups spinach, divided
  • 1 tbsp oregano
  • 1/2 tbsp olive oil
  • lemon
  • baguette, for serving


  1. dice bacon, mushroom and onion. finely chop oregano.
  2. saute bacon, mushroom, onion and oregano in a skillet on high heat 10 minutes, until bacon has cooked through and onions start to caramelize. stir in half the spinach.
  3. make four wells in the mixture and gently crack an egg into each one. reduce heat to medium, cover and cook 2 to 3 minutes.
  4. sprinkle with parmesan cheese and cook an additional 2 to 3 minutes, until whites of the egg are fully opaque and cheese is melted. top with oregano.
  5. serve alongside baguette.
