RECIPE FOR ORANGE CARPACCIO WITH HONEY-PISTACHIO DRIZZLE {serves 1-2}

//ingredients:

  • 1 tbsp pistachios
  • 1/4 cup almond milk (or water)
  • 1 1-inch piece of ginger
  • 1/2 tsp apple cider vinegar
  • 1 tsp honey
  • 1 orange
  • 2 tbsp mint

//directions:

  1. thinly slice orange. coarsely chop mint.
  2. in a blender or food processor, combine pistachios, almond milk, apple cider vinegar, honey and ginger.
  3. drizzle pistachio dressing over oranges. top with mint and serve cool.
